Recipe for Dinner
4 egg yolks
3045 ml/2-3 tbsp caster (superfine) sugar Juice of 1/2lemon
250 ml/8 oz/1/2 cup Asti Spumante sparkling wine 30 ml/2 tbsp orange liqueur
Whisk the egg yolks, sugar, lemon juice and half the wine in an electric mixer at full speed for 2 minutes. Bring the remaining wine to the boil in a saucepan. Add it to the frothy mixture, whisking at a slow speed. Add the orange liqueur. Increase the speed and whisk for another 2 minutes. The mixture should be thickish. frothy and more than double its original volume. Serve hot in dessert glasses.
Note: For lasting thickness, place the bow l in a shallow pan half-filled with water just under boiling point and whisk by hand for 3 more minutes to ensure it will thicken. Do not allow the temperature to exceed 78-80°C.
