Recipe for Dinner
Basic Sweet White Sauce
15 ml/1 tbsp cornflour (cornstarch) 300 ml/1/2 pt/l’1/2 cups milk 10 ml/2 tsp caster (superfine) sugar 15 g/1/2 oz/1/2 tbsp butter or margarine A few drops of vanilla essence (extract)
Blend the cornflour with a little of the milk in a saucepan. Add the remaining milk and the sugar. Bring to the boil and cook for 2 minutes, stirring all the time. Stir in the butter or margarine and the vanilla essence and use as required.
Prepare as for Basic Sweet White Sauce but whisk in 1 egg yolk with the cornflour and milk.
Prepare as for Quick Custard but w hisk one egg white until stiff and fold into the made custard.
