Recipe for Dinner
Extra-special Pecan Pie
75 g/3 oz/1 cup self-raising (self-rising) flour 75 g/3 oz/1 cup wholemeal self-raising flour 75 g/3 oz/1/2 cup butter or margarine 100 g/4 oz/1 cup low-fat soft cheese 50 g/2 oz/ JVt cup light brown sugar
1 egg, beaten 50 g/2 oz/1 cup raisins
5 ml/1 tsp chopped mint
5 ml/1 tsp very finely chopped rosemary Grated rind and juice of 1 lemon
Mix the flours together in a bowl. Add the butter or margarine and rub in with the fingertips until the mixture resembles fine breadcrumbs. Mix with enough cold water to form a firm dough. Knead the pastry (paste) gently on a lightly floured surface. Roll out and use to line an 18 cm/7 in flan dish (pie pan) on a baking sheet. Beat the remaining ingredients together and turn into the pastry-lined dish. Bake in a preheated oven at 220°C/ 425°F/gas mark 7 for about 20 minutes until the pastry is golden and the filling is set. Serve warm.
