Cheese and Tomato Bites
MAKES ABOUT 12
200 g/7 oz/1/2 small carton low-fat soft cheese
1 individual serving instant tomato soup powder 30 ml/2 tbsp grated Pecorino cheese Toasted mixed nuts
Mash the cheese with the tomato soup powder and Pecorino cheese. Shape into small balls and roll in chopped nuts. Chill until ready to serve.
Cheese and Asparagus Pinwheels

MAKES ABOUT 30
5 slices wholemeal bread, crusts removed Low-fat soft cheese
5 canned or cooked fresh or frozen asparagus spears
Flatten the bread lightly with a rolling pin (don’t squash it flat!). Spread with the cheese. Lay an asparagus spear along one end of each slice, then roll up. Cut into slices and arrange on a plate.
