Recipe for Dinner

Swiss Cake

SERVES 4

175 g!6 oz/1/2 cup unsweetened muesli 150 ml/1/2 pt/1/2 cup milk 175 g/6 oz/1/2 cup wholemeal self-raising (self-rising) flour 185 g/61/2oz/ Jgood 3A cup light brown sugar

175 g/6 oz/1/2 cup butter or margarine

3 eggs, beaten

Place the muesli and milk in a bowl and leave to soak for 30 minutes. Grease an 18 cm/7 in cake tin (pan). Mix together the flour and 175 g/6 oz/ 1 cup of the sugar. Rub in the butter or margarine, add the eggs and muesli in milk and beat well. Spoon into the tin and smooth the surface. Sprinkle with the remaining sugar and bake in a preheated oven at 180°C/ 350°F/gas mark 4 for VA hours, until well risen and a skewer inserted in the centre comes out clean. Leave in the tin for 5 minutes, then turn out and leave to cool on a wire rack. Store in an airtight tin.
