Almond Tofu Sauce.
If you do not eat dairy foods, use firm tofu instead of quark, a good pinch of ground coriander (cilantro) and a little salt instead of Pecorino cheese, and silken tofu instead of cream. The sauce will be a little less thick anH a lot less rich.
Baked Brown Bread Sauce.
600 ml/1 pt 1/2 cups water 15 ml/1 tbsp sugar 15 mill tbsp clear honey 15 ml/1 tbsp chopped lemon grass.
1 vegetable stock cube.
2. 5 ml/1/2 tsp ground turmeric.
2. 5 ml/1/2 tsp ground ginger Grated rind and juice of 1 lemon 25 g/1 oz/1/2 tbsp butter or margarine 15 g/1/2 oz/1/2 tbsp flour.
2 egg yolks.
Salt and freshly ground black pepper.
Boil the water with the sugar, honey, lemon grass and stock cube for 5 minutes.
