Almond Tofu Sauce
If you do not eat dairy foods, use firm tofu instead of quark, a good pinch of ground coriander (cilantro) and a little salt instead of Pecorino cheese, and silken tofu instead of cream. The sauce will be a little less thick anH a lot less rich.
Baked Brown Bread Sauce
600 ml/1 pt 1/2 cups water 15 ml/1 tbsp sugar 15 mill tbsp clear honey 15 ml/1 tbsp chopped lemon grass
1 vegetable stock cube
2.5 ml/1/2 tsp ground turmeric
2.5 ml/1/2 tsp ground ginger Grated rind and juice of 1 lemon 25 g/1 oz/1/2 tbsp butter or margarine 15 g/1/2 oz/1/2 tbsp flour
2 egg yolks
Salt and freshly ground black pepper
Boil the water with the sugar, honey, lemon grass and stock cube for 5 minutes. Add the turmeric, ginger and lemon rind. Boil for a further 3 minutes. Melt the butter or margarine in a saucepan and add the flour. Cook for 1 minute, stirring, without browning. Whisk into the hot sauce to thicken. Boil for 3 minutes and strain. In a small bowl, mix the egg yolks with a cupful of the sauce. Add it to the remaining sauce. Cook gently for 3 minutes. Lastly add the lemon juice. (If added earlier the sauce would thin down.) Season to taste. Serve with mushroom, potato, tofu or pasta dishes.
