Recipe for Dinner

Walnut Syrup Pie

SERVES 6

225 g/8 oz/1/2 shortcrust pastry (basic pie crust)

30 ml/2 tbsp plain (all-purpose) flour 100 g/4 oz/1/2 cup light brown sugar

3 eggs, beaten Pinch of salt

100 g/4 oz/1 cup butter, melted 225 g/8 oz/1/2 cup maple syrup and honey, mixed 225 g/8 oz/1/2 cup walnuts, chopped

6 drops of vanilla essence (extract)

Line a well-oiled 20 cm/8 in flan tin (pie pan) with the pastry. In a bowl, mix the flour and sugar. Add the remaining ingredients and beat thoroughly. Fill the pastry case with the mixture. Bake in a preheated oven at 190°C/375°F/gas mark

5 for the first 10 minutes, then reduce the heat to 18(rCA50°F/gas mark 4 for a further 20 minutes until set and golden.
