These are just some of the pieces of advice given to us by our tutor, Berit Vinegrad, on the first morning of a cookery course at Katie Gullick’s house in central Spain. Eight women are assembled around a large table in a kitchen decorated with blue and white tiles. DINING RESERVATIONS FOR UNIVERSAL STUDIOS Berit stands at the end of the table with bowls and plates of fresh ingredients, including herbs picked from the garden that moming. Doors and windows are flung open on to an almost lunar landscape that is to become our home during the following week of cooking, eating, drinking, lying beside the pool and visiting local towns. The setting is spectacular; the huge red plains of La Mancha surround the house, with the hills of Sierra Morena far in the distance.
