Recipe for Dinner
Prepare as for Sparkling Peaches but substitute ripe nectarines for the peaches.
Prepare as for Sparkling Peaches but substitute 225 g/8 oz/1/2 halved strawberries for the peaches and top with sparkling rose instead of white wine.
300 g/1 oril small can strawberries in natural juice, drained, reserving the juice Sugar
60 ml/4 tbsp low-fat soft cheese or cold cooked brown or white rice
Mash the strawberries to a puree with a little of the juice. Sweeten the puree to taste. Dip the peaches in boiling water, skin and halve them and remove the stones (pits). Mix a little sugar into the cheese or rice in the bottom of each of four large, stemmed wine glasses. Place a peach half, hollowed side down, on each spoonful of cheese or rice. At serving point, spoon enough of the strawberry puree into each glass to come level with the top of the peach half.
