Cornflake Cakes

MAKES 16

SERVES 4

75 g/3 oz/1/2 cup butter or margarine 75 ml/5 tbsp golden (light corn) syrup

45 ml/3 tbsp carob powder 100-175 g/4-6 oz/4-6 cups cornflakes

Melt the butter or margarine and syrup in a pan. Stir in the carob powder. Gradually stir in enough cornflakes so that they are coated in the mixture. Put spoonfuls into paper cases (cup cake papers) and leave to cool or eat hot if you can’t wait.
