Soy Pressing

SERVES 4

60 ml/4 tbsp soy sauce 15 mill tbsp lemon juice 15 mill tbsp sunflower oil 20 ml/4 tsp clear honey

2.5 ml/1/2 tsp ground ginger 60 ml/4 tbsp water lend all the ingredients together and store in the fridge in a screw-topped

Chive and Vinegar Pressing Honeyed Soy Sauce

SERVES 4

45 ml/3 tbsp white wine vinegar 90 ml/6 tbsp olive oil Freshly ground black pepper 15 ml/1 tbsp snipped chives A dash of lemon juice

SERVES 4

Mix together all the ingredients and chill before serving.

60 ml/4 tbsp light soy sauce

15 mill tbsp sunflower oil

15 mill tbsp lime juice

2.5 ml/1/2 tsp grated fresh root ginger

20 ml/4 tsp clear honey

10 ml/2 tsp medium-dry sherry
